(01) The bakehouse

We are a small bakery with a big oven. Every loaf is mixed by hand the afternoon before, left to ferment slowly overnight and baked before the sun is up. When it is gone, it is gone, and whatever is left at close goes to the Shipley food bank that evening.

(02) How we bake

Two days
in the making.

Four ingredients: flour, water, salt and a starter we have fed every morning since we opened. The rest is time.

Mix

Stone-ground Yorkshire flour, water and salt, folded into the starter by hand.

Sixteen hours in the cold. The flavour comes from here, not from anything we add.
